The primary purpose for it currently is to implement a simple HTTP server that can be easily embedded into a larger project. Realistically, priority is obviously given to things that we (Atomic Labs) need for our Pion Enterprise products. But it's being used in several other completely unrelated projects, and certainly I think that it would work well within an "http proxy" project as well.
